Ingredients for making chicken tapioca with catupiry:

 1 cup of cassava gum

 1 cup cooked and shredded chicken

 4 tablespoons of catupiry (creamy cheese)

 1 cup of arugula leaves

How to make chicken tapioca with catupiry:

To make frying pan tapioca you will need cassava gum, also called hydrated cassava starch or simply ready-made tapioca dough. It should be the same as the one shown in the photo, made up of small granules that fall apart easily when pressed between your fingers.

Place a frying pan over medium heat and, without needing to grease, place a layer of the cassava gum. Spread it with a spatula to get smooth. Leave for 1 minute without further stirring.

Tip: If your cassava gum is very grainy, with large flakes, pass it through a sieve before putting it in the pan.

Then place the filling in one of the tapioca halves: a little shredded chicken, cream cheese and arugula leaves.

Tip: You can prepare this tapioca recipe in the pan with leftover chicken and other ingredients of your choice!

Fold the tapioca in half with the help of a spatula and leave it in the pan for another 1-2 minutes, for the curd to melt and join with the tapioca and other filling ingredients.

Then just serve, simple as that! Repeat the preparation of this chicken tapioca with cream cheese as often as necessary until you prepare the amount of tapioca you like. Serve with, for example, a detox juice to deflate, and good appetite!
